Typically, tempura is made of multiple ingredients such as vegetables, fish and seafood, dipped in a batter made of flour and water (sometimes egg), and deep fried. It is usually dipped in a sauce called tentsuyu made of fish broth, or sprinkled with salt when eaten. Some examples of tempura ingredients are:
Shrimp, shiitake mushroom, sweet potato, pumpkin, lotus root, okra, bamboo shoot, onion, egg plant, green pepper, burdock, green beans, shiso leaf, fish, squid, fish cake, and more.
Tonkatsu is a pork cutlet. The meat is dipped in flour, beaten egg, then panko (bread crumbs) before deep frying. Tonkatsu is often served with a bowl of rice, miso soup, chopped cabbage, and tonkatsu sauce. You can pour the tonkatsu sauce not only on the pork, but the cabbage as well. Furai is the Japanese word for 'fry.' Sakana furai is fried fish. Ebi furai is fried shrimp. Ika furai is fried squid. These are also covered in the same batter as tonkatsu, and are very crispy.

The variety is very wide, and many restaurants come up with their own original menus.
